Tonight – Beef Stew

Tonight, since its not so hot outside, will be beef stew night.  Stewing beef is fairly inexpensive and can feed a whole family.  Stewing beef was on sale for $3.69 a pound and this package was a little over a pound.  Heat a couple tablespoons of olive oil in a large heavy pot, salt and pepper meat and add to the pot with a couple tablespoons of chopped onion and celery.  Add 1 teaspoon of chopped garlic, 2 tablespoons of margarine and saute till meat is browned and not quite done.  When I have sliced mushrooms I will add them to saute as well, love baby portabellas for this, about a cup of them.

Add 2 14.5oz cans of beef broth, 1/4 cup Marsala cooking wine (can omit),  1 cup water, 1 packet of beef bouillon, 1 cup of diced carrot and 2 medium potatoes diced to a similar size as the carrots.  Salt and pepper to taste, add 1 bay leaf. Simmer



When carrots and potatoes are tender add 1/2 cup frozen peas, generous pinch of dried parsley and 1 tablespoon of cornstarch mixed into 1/2 cup cold water.  Simmer 10 minutes stirring often till thick.


Serve warm with Bisquick biscuits.

1 1/2 cups Bisquick mix

1/2 cup milk

mix together till thick and sticky

drop by large tablespoons, should make about 6, onto greased pan.  Bake at 450 8-10 minutes.
