Easy Everyday Recipe – Hamburger Vegetable Soup


This is one of our favorite go-to easy meals.  Especially nice on cool fall days but just as yummy in the warmer months.  I like to serve it with some crusty bread or rolls. I use what ever veggies we have on hand, today I had some corn and yellow wax beans frozen from the garden.

Hamburger Vegetable Soup

1 pound 85% lean ground beef, browned with 2 tbsp chopped onion and 1 tsp minced garlic
2 cups water
1 beef bouillon cube or packet
1 can beef broth
1 small can tomato sauce or petite diced tomatoes
1/4 cup small pasta
1/2 cup corn
1/2 cup green beans
1/4 cup peas
1/4 cup chopped carrots
1 bay leaf
a few dashes of Worcestershire sauce
1 Tbsp sugar
(what ever veggies you like, sometimes I add spinach or escarole)
salt and pepper to taste, pinch of parsley and basil
1 Tbsp butter

Prepare ground beef and drain. In a 3-4 qt pot cook carrots in 2 cups water, add remaining ingredients and simmer till pasta is cooked and flavors combine, about 15 minutes. Remove bay leaf before serving.
